Emu Recipes from Dino-Meat Company

You may normally use emu meat in most any recipe that calls for beef, but we want to share with you some special emu meat recipes that we have gathered, used and enjoyed for years. We will update this page periodically with new recipes.  Many of our recipes have been provided by those that are cooking low fat recipes for someone with heart disease and those that must be selective about cooking red meat. We hope you enjoy them as much as we do.

We have also provided a nutrition per serving chart after each recipe for those with heart disease or those who require low fat recipes

MEXICAN CORNBREAD CASSEROLE
bullet   1 lb. ground emu meat  
bullet   2 tb. chopped green chillies  
bullet   1 (15 oz) can cream style corn, divided  
bullet   1 (6 oz) pkg. corn bread mix 
bullet   1/4 chopped onion    
bullet   1/2 cup egg substitute    
bullet   2/3 cup skim milk  
bullet   1 cup grated non-fat cheddar cheese 

Preheat oven to 425 degrees. Brown meat, onion, and chillies in a non-stick skillet. Set aside. Combine egg substitute, 1 cup corn and the milk with the corn bread mix. Stir just until moistened. Pour half the batter in a 9 x 9 inch baking dish sprayed with cooking spray. Top with meat mixture, cheese, and remaining corn. Pour remaining batter on top and bake for 25 to 30 minutes.

Dino-Meatballs
bullet  1 lb. ground emu meat
bullet  1/2 cup raw rice          
bullet  1/2 cup chopped onion   
bullet  1/4 cup egg substitute          
bullet  1/4  tsp. pepper 
bullet  3 tbsp. flour    
bullet  2 (8 oz) cans tomato sauce       
bullet  1/2 cup water 
bullet  1/3 cup brown sugar  
bullet  1 tsp. Worcestershire sauce
bullet  1/4 tsp. dry mustard

Mix meat, rice, onion, egg substitute, pepper, and flour together. Form into 1 inch balls and brown in non-stick skillet. Make a sauce of the remaining ingredients. Pour over meatballs and simmer approximately 45 to 50 minutes or place in covered baking dish and bake 350 degrees for 30 minutes.
